Martin has a background as former head chef at Michelin restaurants and co-founder of a traditional sourdough rye bakery and organic café in Stockholm. Why do we need to transform the food system?
“A change in the food system is crucial for a sustainable future, we have known that for a long time and even the research shows it. Here, it is important that the next generation follows along and takes their responsibility. What can you do as a chef, for example. How can you change menus, concepts, and offer so that it is partly sustainable but still very good. If we don’t create food experiences that taste good, it is difficult to bring about major change.
