Gustav Johansson runs Sweden’s largest vegan food blog Jävligt Gott. He is also the culinary leader and co-owner of the plant-based restaurant ChouChou in Stockholm. With his work, he wants to inspire others to cook more plant-based food, by showing how simple and tasty it can be!
Why do we need to transform the food system?
“What we eat is not only a large part of our identity and how we socialize with others, it is also one of the actions we perform that has the absolute greatest impact on the planet we live on and its climate. We use about 40% of all available land to grow and produce food, and this has led to not only changing the way our planet looks, we have also caused one of the worst mass extinctions of animal species ever as we destroy habitats and out-competing wild animals in favor of domestic ones. Only 4% of all mammals left are wild animals, the rest is us and our livestock!
Not taking responsibility for how and what we eat is, in my opinion, bizarre. We have made ourselves masters of this planet, and then we must also rule responsibly and not take more than the planet can handle.”
